High Protein Zucchini & Carrot Fritters

This is one of my faves!
-4-5 egg whites
-1 whole egg
-1 medium sized zucchini
-1 small carrot
-veggie salt

Grate zucchini & carrot into egg whites and add salt. Mix through.
Lightly spray a fry pan with olive oil and pour mixture into pan.
Turn over after a few minutes and make sure the egg is cooked through
the centre too.
Serve hot with rye toast – yum!

    Hello, I’m checking out your recipes. In the zucchini & Carrot Fritters ingredients it says 1 egg yet doesn’t use it in the recipe itself. What do we do with it?
